Banana Blueberry Breakfast Bars



These protein packed family friendly breakfast bars are a great way to use those over ripe banana's you have sitting on your counter. They're easy to make and a great way to get some nourishment into little ones.


Ingredients:


2 - ripe banana's, mashed

2 - large eggs, room temperature

3 tbsp - coconut oil, melted

3 tbsp - honey or maple syrup

1 tsp - vanilla extract

1 cup - almond flour

1 cup - chickpea flour

1/2 tsp - sea salt

1 tsp - baking powder

1 cup - blueberries

1/4 cup - dark chocolate chips (optional)



Directions:


  1. Preheat oven to 350°. Line a 9 x 12 pan (or similar) with parchment paper.

  2. In a large bowl, mix mashed bananas, oil, honey, and vanilla. Stir in both flours, baking powder and salt. Careful not to over mix. Fold in the blueberries.

  3. Transfer the batter to your prepared pan. Sprinkle the top with chocolate chips (optional). Bake the bars until golden brown at the edges and firm in the center, about 25 minutes.

  4. Allow the bars to cool before removing from pan.

  5. Enjoy!

Made this recipe for breakfast this morning, it was so delicious! Not only did Ben love it but I did too - and I’m happy to get my picky eater some extra nutrition. I’d never used chickpea flour before, but now I’m excited to use it again.
