Who doesn't love a good brownie?
Ingredients:
2 cups - coconut sugar
2/3 cup - melted grass fed butter
1/2 cup - boiling water
3/4 cup - cacao powder
2 eggs - pasture raised preferred
2 tbsp - avocado oil
1 tsp - vanilla extract
1/2 tsp - baking soda
1/2 tsp - sea salt
1 cup + 2 tbsp - gluten free flour of your choice. I used Bob's Redmill 1:1.
1 cup salted caramel chocolate chips
Method:
Preheat oven to 350F. Prep a brownie pan or 9 x 13 baking pan.
In a medium sized bowl - combine coconut sugar, hot water and melted butter. Stir until the sugar has completely dissolved.
In a large sized bowl - combine cacao powder, eggs, avocado oil, vanilla, baking soda, and sea salt. Mix with an electric hand mixer until smooth ~ about 1-2 minutes.
Add the sugar mixture to the cacao mixture and mix for 30 seconds or until smooth. With a spatula, add in the flour - just until blended. Fold in the salted caramel chips.
Add your batter into the prepared pan. Bake for 30-35 minutes or until set and toothpick comes out clean.
